Recipe: Vegan Cauliflower Alfredo Pasta

Dreaming of tucking into a creamy but dairy-free classic pasta dish? This plant-based Alfredo Fettuccine will not disappoint - and it's easy to whip up!

This is one of the most delicious pasta recipes we've tried to date. It satisfies any carb craving and is made with simple ingredients found in every plant-based kitchen.


Ingredients


3 cups cauliflower florettes

1 tbs vegan butter (melted)

½ cup plantbased milk

1-2 tbs nutritional yeast

Pasta of your choice

Salt and pepper


Method


  1. Boil or steam cauliflower for 10 mins. Set aside and let cool for 5 mins.

  2. Add steamed cauliflower, melted butter, plantbased milk and nutritional yeast into a blender, and blend until smooth.

  3. Transfer the sauce into a saucepan and bring to boil over medium heat. Stir continuously to prevent burn at the bottom of the pan.

  4. Once boiled, remove from heat, and season with salt and pepper.

  5. Cook your preferred pasta per packet instructions.

  6. Toss the alfredo sauce with your pasta and serve warm.
